Strascinati with crusco pepper and crunchy breadcrumbs

Here is a typical Lucanian recipe featuring “Porreca” strascinati, flavoured with fried breadcrumbs and crushed cruschi peppers, which give this special type of pasta the unique and unmistakable flavour of the tradition and culture of this wonderful and ancient Mediterranean land.

Ingredients

for 4 people

Bread crumbs, preferably semolina, in cubes 100 g

Dried Cruschi Peppers 8

Extra virgin olive oil 150 gr

Garlic clove 1

Hot chili pepper 1

Preparation

 Fry the peppers in a pan, removing the stem and seeds, with 6 tablespoons of extra virgin olive oil for no more than 3 seconds, then place them on absorbent paper. In the meantime, bring plenty of salted water to the boil.

 Fry a clove of garlic, a hot chili pepper and add the breadcrumbs in pieces, stirring until golden.

 Add the seasoning to the Porreca strascinati where flavors and aromas blend in a perfect union. Enjoy your meal!
