Wholemeal spaghetti with dried cherry tomatoes and burrata

A super colorful and tasty first course, made of simple and traditional products and flavors of Apulian cuisine, for an occasion with friends.

Ingredients

for 4 people

Burrata (with the preserving liquid) 300 gr

Dried tomatoes in oil 120 gr

Fresh chilli pepper

Basil

Salt to taste

Extra virgin olive oil to taste

Preparation

1 Blend the burrata with a few spoonfuls of its liquid for a few seconds to obtain a cream. Cook the spaghetti in plenty of boiling salted water.

2 Pour 3/4 of the burrata into a large bowl, add the cherry tomatoes in oil, a few slices of chili pepper, a drizzle of oil, a little of the spaghetti cooking water and mix the dressing.

3 Add the spaghetti drained al dente, adding the remaining burrata cream, a few basil leaves and serve immediately.
