Wholemeal penne rigate with pepper cream

For a quick first course, based on vegetables, whole wheat penne with pepper cream are perfect. A simple dish and at the same time an explosion of flavors, thanks to the rich taste of Porreca whole wheat pasta and the sweet and decisive flavor of pepper.

Red pepper 1 large or 2 small

White wine

Basil

Extra virgin olive oil

Salt

Parmesan cheese

Preparation

1 To make whole wheat penne rigate with pepper cream, start by soffritto for the sauce. Chop the shallot and brown it in a little heated oil, then moisten it with white wine, until the shallot becomes almost transparent.

2 Add the pepper cut into strips and cook for 15 minutes on a low flame. Add salt and, if necessary, dilute with water. When the pepper is cooked, pour into a bowl and blend, adding a basil leaf before a final spin in the mixer.

3 Quickly pass through a sieve. Boil the penne in plenty of salted water, drain and mix them in the cream, remove from the heat and add a final touch, sprinkling the whole wheat penne with pepper cream with parmesan cheese and serve.
