A tasty first course that has recently become part of the Bari tradition, as well as a tasty way to use up leftover sauce. Spaghetti all’assassina is an alternative version of the classic spaghetti with tomato sauce, for a dinner that is different from the usual.
Ingredients
for 4 people
Spaghetti Porreca 320 gr
Tomato sauce 300 gr
Clove of garlic 1
Extra virgin olive oil 25 g
Dried chili pepper 1
Basil q.b.
Warm and salty water q.b.

Preparation
1 To prepare the Porreca all’assassina spaghetti, start by heating the leftover sauce in a saucepan, prepared with a soffritto of onion and puree cooked for 30-40 minutes. In the meantime, in another pan, fry a clove of garlic for a couple of minutes with a drizzle of oil. Then add the spaghetti and immediately moisten with hot water.
2 Stir for a few moments to soften the pasta and then pour in a ladle of the reheated sauce. Crumble a dried chili pepper and continue to moisten the pasta with hot water.
3 At the end of cooking, remove the garlic and add the remaining sauce. Season with salt and finish cooking by raising the temperature, leaving the bottom to burn to make the pasta crispy and golden. Your spaghetti all’assassina are ready, serve them piping hot, decorating with fresh basil as desired.
Tip Use an iron pan to ensure optimal results.
